I love stroganoff, but not all the fat. So, I revised an original recipe to make it healthier.

Ingredients For on the lighter side beef stroganoff

1 lbno-yolk noodles
-
1-1/2 lbangus beef stew meat, cut into strips

1onion, chopped
-
8 ozsliced fresh mushrooms
-
110-3/4 oz can reduced-fat condensed cream of mushroom soup

1 cbeef broth
-
1/8 tsppepper
-
1/4 tspsalt
-
1/2 clight sour cream
-
2 Tbspfreeze-dried parsley
How To Make on the lighter side beef stroganoff

1Cook noodles as directed, drain. Keep warm. Spray a lg skillet w/ cooking spray. Brown beef and onions over med-high heat until meat is no longer pink. Stir occasioanlly.

2Add mushrooms, cook 3 min. Reduce heat to med-low. Stir in soup, broth, salt, and pepper.

3Simmer 25 mins or until meat is tender. Stir in sour cream and parsley. Serve over noodles.
