okra, onion, tomato and macaroni bowl
This is my alternate to plain macaroni tomatoes. I like adding the okra and onions. I also add corn and chicken sometimes. It is a quick meal for busy days. You can use canned or frozen vegetables and even canned or pre-cooked chicken. If you use fresh vegetables and chicken, it will take longer to cook.

Ingredients For okra, onion, tomato and macaroni bowl

1 canokra and tomatoes

1/2 cchopped onion

2 cchicken broth

2 Tbspextra virgin olive oil

1 tspblack pepper

1 tspgarlic powder

1 canwhole kernel corn, drained, optional

1 1/2 cmacaroni pasta

one large cooked chicken breast or 4 boneless skinless thighs, diced into bite size pieces, about 1/2 inch, optional
How To Make okra, onion, tomato and macaroni bowl

1Pour the entire can of okra and tomatoes into a 2-3 quart pot.

2Add remaining ingredients to the pot.

3Turn the heat to medium high and bring to a boil. Once it begins to boil, reduce the heat to medium and let the pot simmer for 10 minutes for al dente pasta. It will need to cook cook a few minutes more if you want softer or even mushy pasta.
