Ingredients For my favorite low-fat lasagna!

  • 1 1/2 lb
    ground chuck
  • 1 md
    onions diced
  • 1 md
    green bell pepper diced
  • 1 sm
    can of pieces and stems mushrooms
  • 1 md
    container of lowfat ricotta
  • 1 md
    container of lowfat cottage cheese
  • 2
    eggs
  • 1 lb
    mozzarella cheese, low-fat
  • 8
    lasagna noodles, cooked
  • 1 jar
    marinara sauce
  • 1 pinch
    parmesan cheese, fat-free
  • salt and pepper
  • 1 Tbsp
    parsley flakes

How To Make my favorite low-fat lasagna!

    Brown ground chuck and rinse in collander with hot water, return to pan. Add onion, green pepper and mushrooms. Saute till onions and green pepper are tender. Add marinara sauce. In seperate mixing bowl add ricotta,cottage cheese, parmesean, 2 eggs, salt,pepper and parsley. Mix well.

    Assemble lasagna with sauce on bottom, noodles, ricotta mixture, more sauce, mozerella. Next layer of noodles, ricotta mixture, sauce, ending with generous amount of mozerella, top with parmesan. Bake at 375 till cheese is golden brown and lasagna is heated through. Let stand for 15 minutes before cutting and serving.
