Ingredients For mini bowtie mediterranean salad

  • 1 box
    mini bowtie pasta
  • 1/3 c
    kalamati greek olives, slice in 1/2
  • 4 md
    roma tomatoes, chopped seeded or 1/2 pint grape tomatoes slicde in 1/2
  • 1 sm
    red onion, chopped
  • 1 sm
    english cucumber, chopped
  • 1/2 jar
    capers
  • 16 oz
    light italian dressing
  • 3 md
    garlic loves, grated
  • 3 Tbsp
    italian parsley, chopped
  • 2 Tbsp
    herbes de provence
  • 1 lg
    lemon, juice and zest
  • 1 tsp
    crushed red pepper flakes
  • 4-5 Tbsp
    extra virgin olive oil
  • kosher salt to taste
  • 1/2 c
    parmesan cheese

How To Make mini bowtie mediterranean salad

    Cook pasta according to package. Do not over cook. Place pasta in a colander and run cold water to stop cooking. Drain well.

    In a large mixing bowl, add all the ingredients except the parmesan cheese. Mix thoroughly.

    Chill in fridge over night.

    30 minutes b4 serving, add parmesan cheese and mix well. If pastea is a little dry, add more dressing
