Even though this has quite a few ingredients, it's easy to put together. I found the basic recipe years ago and added more things I like.

Ingredients For mexican lasagna

  • 2 lb
    hamburger meat
  • 1 lg
    onion, diced
  • 2 pkg
    taco seasoning
  • 2 can
    pinto beans
  • 1 sm
    can black olives, sliced & drained
  • 2 pkg
    shredded mexican cheese blend
  • 2-3 dash
    red pepper flakes
  • 1/2 tsp
    cumin
  • 1 lg
    tub sour cream
  • 1 lg
    can enchillada sauce
  • corn tortillas
  • sliced jalapenos
  • tomatoes, chopped

How To Make mexican lasagna

  • 1
    Brown hamburger, with red pepper flakes, cumin and onions till tender.

    Drain meat & add taco seasoning and pinto beans. Mix well & set aside.

    Start with meat mixture, making a thin layer in bottom of 9x13 pan.

    Sprinkle with black olives and shredded cheese.

    Spoon enchillada sauce over each layer evenly then top with tortillas. You may have to tear a few to fit in the corners.

    Repeat layers until ingredients are used up. Last layer should be shredded cheese.

    Bake till top is browned. Let stand for about 10 minutes before serviing.

    Best served with a dollup of sour cream with jalapenos & chopped tomatoes on top.
