Even though this has quite a few ingredients, it's easy to put together. I found the basic recipe years ago and added more things I like.

Ingredients For mexican lasagna

2 lbhamburger meat
-
1 lgonion, diced
-
2 pkgtaco seasoning
-
2 canpinto beans
-
1 smcan black olives, sliced & drained
-
2 pkgshredded mexican cheese blend
-
2-3 dashred pepper flakes
-
1/2 tspcumin
-
1 lgtub sour cream
-
1 lgcan enchillada sauce
-
corn tortillas
-
sliced jalapenos
-
tomatoes, chopped
How To Make mexican lasagna

1Brown hamburger, with red pepper flakes, cumin and onions till tender.

2Drain meat & add taco seasoning and pinto beans. Mix well & set aside.

3Start with meat mixture, making a thin layer in bottom of 9x13 pan.

4Sprinkle with black olives and shredded cheese.

5Spoon enchillada sauce over each layer evenly then top with tortillas. You may have to tear a few to fit in the corners.

6Repeat layers until ingredients are used up. Last layer should be shredded cheese.

7Bake till top is browned. Let stand for about 10 minutes before serviing.

8Best served with a dollup of sour cream with jalapenos & chopped tomatoes on top.
