- FOR THE MACARONI LOAF

1 cmacaroni

1 cbread pieces

1 clight cream
-
1/2 cmelted butter

3 lgeggs

salt, to taste

3/4 ccheddar cheese, grated

2 ozpimento

1 Tbspparsley, chopped
- FOR THE MUSHROOM SAUCE
-
2 Tbspunsalted butter
-
1 1/2 tspolive oil
-
10 ozmushrooms, sliced

2garlic cloves, minced
-
1/4 cwhite wine
-
1/2 cchicken broth
-
1 ccream
-
1/2 cparmesan cheese, finely grated
-
2 tspfresh thyme, chopped
How To Make macaroni loaf with mushroom sauce

1Prepare the loaf: Preheat oven to 350F,. Grease a 5x9 inch loaf pan - set aside

2Cook macaroni according to package directions. Drain. Gently combine all ingredients and pour into the prepared pan.

3Place loaf pan in pan of water inside oven. Bake 1 hour or until a knife inserted in the center of the loaf come out clean.

4Meanwhile, For the Sauce: Heat oil and butter in a large skillet. Add mushrooms and cook until golden brown. This will take about 5 minutes. During the last minute, add the garlic and a pinch of salt.

5Add the wine and stir to deglaze the pan, stirring up all the brown bits from the bottom of the pan. Cook until most of the wine evaporates.

6Add broth, cream and parmesan cheese. Stir and bring to a simmer. Simmer for 3-4 minutes until slightly thickened. Stir in the thyme. Taste and adjust seasoning if needed.
