Yeah, its amazing what can come out of the kitchen when I am out of my staple groceries. Here I am again, cleaning out the cupboards and the fridge. Easily serves 2 as a lunch, or 4 sides for dinner. Could use any cheese combination, I found this combo tasted amazingly like my favorite german cheese fondue.

Ingredients For mac n cheese (fondue style)

1/2 lbpenne pasta
- SAUCE

1/4 cbutter, melted

1/4 cflour
-
salt and pepper to taste

1/8 tspnutmeg
-
1/2 tspgarlic
-
1/2 cmozzarella cheese, grated
-
1/2 cparmesan cheese or romano cheese
-
1/2 csharp cheddar cheese, grated
-
1/2 ccream cheese, room temperature
-
1/2 cdry white wine
-
milk, enough to make it saucy (a few cups)
How To Make mac n cheese (fondue style)

1Boil the pasta for 8-10 min till aldente. Drain pasta and set aside.

2In a large sauce pan on med-high, melt the butter and stir in the flour. Add the spices and garlic. Stir and cook long enough for the flour to turn a light golden color.

3Add the wine and the cheese quickly. Start adding the milk slowly. Whisk continuously while bringing to a boil, the whole pot will become saucy and so amazingly aromatic.

4Slide pasta into the cheese sauce and stir to incorporate.
