Ingredients For linguini, shrimp & asparagus

  • 1 lb
    medium cooked shrimp, peeled, deveined
  • 1 lb
    fresh asparagus
  • 8 oz
    dried linguini
  • 3 tsp
    minced garlic
  • 1 Tbsp
    olive oil
  • 8
    roma tomatoes, coarsely chopped.
  • 2 Tbsp
    tomato paste
  • 1/3 c
    chicken broth
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 Tbsp
    butter
  • 2 tsp
    dried basil

How To Make linguini, shrimp & asparagus

    Trim asparagus, remove tips and set aside. Slice the asparagus stalks on a bias into 1"-pieces, set aside. Cook pasta as directed, drain, keep warm. In lg skillet cook & stir garlic in oil over medium heat for about 15 seconds. Add tomatoes and tomato paste. Cook, stirring 3 min. Add to skillet, the asparagus stalks, broth, salt & pepper. Bring to a boil. Reduce heat, cook 3 min. Stir in shrimp and asparagus tips. Cook 3 min, or until shrimp is pink. Stir in butter until melted. Add shrimp mix to pasta. Stir in basil, toss to coat.
