Ingredients For linguine w/ fire-roasted tomatoes and feta

  • 1/2 lb
    linguine pasta
  • 1 Tbsp
    olive oil
  • 3 tsp
    minced garlic
  • 12 md
    shrimp, peeled, deveined
  • 1
    14.5 oz can chopped fire-roasted tomatoes.
  • 1 Tbsp
    fresh chopped basil
  • 1/2 tsp
    each, salt and pepper, or to taste
  • 1/2 c
    crumbled feta cheese. i used reduced-fat

How To Make linguine w/ fire-roasted tomatoes and feta

    Cook pasta as directed, drain, keep warm. Heat oil in lg skillet over medium heat. Add garlic, cook for 1 min. Add shrimp, cook until pink. Pour in tomatoes, stirring until heated through. Season w/ basil, salt & pepper. Toss pasta w/ sauce. Sprinkle w/ crumbled feta cheese.
