I had some leftover bacon that my husband cooked up for breakfast. I was going to make mac cheese and decided to add the bacon to it.

We're not sure there are many flavors that pair better than bacon and cheese. The more cheese (and bacon) the better and this macaroni and cheese recipe is packed with both! We love the variety of cheeses... makes for creamy mac and cheese. The bacon adds a bit of a salty, smoky flavor that complements the cheesy goodness.

Ingredients For karen's mac and cheese with bacon

  • 4 oz
    Colby Jack cheese
  • 4 oz
    sharp cheddar
  • 8 oz
    mozzarella cheese
  • 1/2 lb
    Velveeta cheese
  • 4 Tbsp
    butter or margarine
  • 5 slice
    bacon, cooked until crisp
  • salt and pepper, to taste
  • 1 1/2 c
    milk, 2%
  • 1 lb
    box of pasta, cooked
  • 1/2 c
    bread crumbs

How To Make karen's mac and cheese with bacon

  • All the cheese prepped.

    Cut Velveeta cheese into small cubes. Combine remaining cheese in a bowl.
  • Cheese, butter, milk, salt, and pepper in a large saucepan.

    Put the cheese, butter, milk, salt, and pepper in a large saucepan. Cook over medium-high heat until cheese is melted.
  • Pasta and bacon added to the melted cheese.

    Add pasta and bacon to cheese mixture.
  • Pasta poured into a baking dish and topped with bread crumbs.

    Pour into a large casserole dish that has been prepared with vegetable spray. Sprinkle bread crumbs evenly over pasta.

    Bake for about 30 minutes or until bubbly.
