These meatballs are fabulous. The ricotta cheese adds flavor and keeps them from being dry, as well as acting as a binder along with the egg. I have been working on meatballs for years trying to get a good one and I read about adding the ricotta cheese - it really is fantastic. Serve with your favorite sauce and over pasta. Add a salad and some garlic bread and you have a GREAT spaghetti dinner!

Ingredients For italian meatballs

1 lbground beef
-
2eggs
-
3 clovegarlic

1/4 cricotta cheese

1/2 citalian flavored bread crumbs

1/4 cparmesan or peccarino cheese

3 Tbsporegano or italian seasoning to taste. i usually add about 3 tablespoons.
How To Make italian meatballs

1Grate garlic cloves

2lightly beat the eggs until yolk and white are blended

3Combine all ingredients and blend thoroughly, adding italian seasoning or oregano to taste.

4Form the meatballs - should make about 20 meatballs, and fry in olive oil.
