insomniac pasta with chicken
This dinner cooks up quickly and is delicious and can make a great midnight snack when the munchies hit! The salt, pepper and olive oil ingredients are not given in exact measurement because I tend to under-salt, over pepper and get the oil all wrong! Side note: Serve with olive or artichoke bruschetta on the side for an added zing - or not! Also, substitute red pepper flakes instead of black pepper for more heat. Either way, it's delicious.

Ingredients For insomniac pasta with chicken

2chicken breast halves, cut into bite-sized pieces

8 - 10 ozspaghetti

2 tspgarlic, chopped

1/2 cfresh parsley, chopped

1/2 cfresh grated parmesan cheese

How To Make insomniac pasta with chicken

1Using a medium saucepan, cook pasta in boiling salted water for about 8 – 10 minutes, or until al dente.

2Meanwhile, put 2 rounds of oil in a large skillet and set heat to high for 2 minutes, then add the chicken; reduce heat to medium-high and sprinkle with a fingerful of salt. Cook until chicken appears to be just done, then remove from heat.

3Your pasta should be done, so drain it in a colander and set over a bowl.

4Using the pasta saucepan, put enough olive oil to generously cover bottom of pan. Heat on high for one minute then add the chopped garlic and black pepper and stir for about 30 seconds to infuse the aromatic wonderfulness but be careful! Garlic likes to burn in a heartbeat, so adjust this time accordingly.

5Remove the infused oil from the heat, add the chicken and pasta, and stir until the goodness is evenly distributed.

6Add the fresh Parmesan cheese, stir to mix, and lastly, toss the fresh parsley and mix lightly.
