This pasta salad combines the flavors of a great antipasta for a fantastic main course pasta salad.

Ingredients For insalata

  • 1 lb
    cooked rigatoni
  • 1 can
    red kidney beans, drained and rinced
  • 2 md
    tomatoes, diced
  • 8 oz
    hard salami, diced
  • 8 oz
    mozzarella cheese, diced
  • 6 oz
    black olives, sliced
  • 4 slice
    prosciutto, cut into strips
  • 1 can
    artichoke hearts, drained and quartered
  • 1/4 c
    italian dressing
  • to taste
    salt and pepper
  • 1 tsp
    oregano

How To Make insalata

  • 1
    Place the cooked pasta in a large bowl. In a seperate bowl, combine the beans, tomatoes, salami, cheese, olives, prosciutto, and artchikes.

    pour the dressing over the pasta, stir, and then fold in the anitpasta mix. Season with salt, pepper and oregano. Chill until ready to serve.
