Every family gathering that we have, my niece Halie always calls me and tells me that I need to fix the pasta salad...My son & her eat almost all of it themselves!

Ingredients For hope's spring vegetable pasta salad

  • 1 box
    3 colored rotini noodles
  • 12 oz
    bottle of light italian dressing
  • 2 sm
    cucumbers (i use the pickling ones)
  • 1 pkg
    cherry tomatoes
  • 1 can
    sliced black olives
  • 1 bunch
    cauliflower, small florets
  • 1 bunch
    broccoli florets
  • 1/2 pkg
    cheddar cheese, shredded

How To Make hope's spring vegetable pasta salad

    Boil the rotini noodles until done...(my family likes them just a little undercooked), let cool. In the meantime, finely chop the 2 small cucumbers, cut the cherry tomatoes in half, finely chop the black olives, the cauliflower, & the brocoli and put in a large container. Next after noodles having been cooled add those to the rest of the mixture in the container. Mix well then add the shredded cheddar cheese. Once all of that is mixed up I add the whole bottle of italian dressing to it. Mix well...you can buy a bigger bottle of the dressing if you want....it's just according to your taste.
