homestyle fried ramen noodles
We rarely eat Ramen due to fat and sodium grams but do keep a few packages on hand for my great nephew. They were a lifesaver last night when friends dropped by... with hungry children! All I had on hand (aside from some leftovers) was Ramen and some frozen veggies. It was on the table in 10 minutes (hungry children do not wait well!) and turned out really tasty. I learned that kids love the noodles so much; they didn't object to the peas and carrots with them!

Ingredients For homestyle fried ramen noodles

23 oz. packages ramen noodles, any flavor (i used oriental)

enough wate to cover noodles, room temperature

1 cpeas and carrots, frozen (or cooks choice veggies)

4eggs, beaten

1 Tbspsesame oil
-
1/2 tspwhite pepper
-
2 Tbsppeanut or sesame oil

8green onions, chopped
-
1 Tbspgarlic, chopped
-
2 Tbspsoy sauce
-
1 - 2 coptional meat. ex: cooked pork or chicken. would be good w/ shrimp!
How To Make homestyle fried ramen noodles

1Break noodles into small chunks and cover with water (just enough to soak noodles). Sprinkle with contents of seasoning packets. Stir to distribute seasonings and let soak until needed.

2Place frozen veggies in colander and rinse with hot water to defrost.

3Mix together eggs, 1 tablespoon sesame oil, and white pepper. Set aside until needed.

4Heat a wok or large skillet and add the oil. Add the garlic and green onions and stir fry for 30 seconds. Add optional meat and veggies and stir fry until hot; about 1 minute.

5Drain noodles well; add to skillet and stir constantly for about 2 minutes. Stir in soy sauce until well combined. Pour eggs into skillet and continue to cook and stir until bits of eggs are cooked. Serve while hot!
