To many people now a days pre pare things from boxes and bags. The true art of cooking is disappearing. Cooking from scratch isn't always hard for instance noodles. I have a lot of big eaters in my family ( 3 growing boys). This would probably feed more then 8. How ever the last time I made this with beef I had to make more before I could eat as the boys ate the whole pot. I didn't let them dry just dropped them into the boiling broth by very small spoon 1/2 fulls. I prefer them dried but in a pinch this works well.

Ingredients For home made noodles

1 2eggs

5-6 cflour

1 1/2 tspsalt

1 tspwhite pepper

i use white so it doesn't look like dirt in the noodles
How To Make home made noodles

1Mix all ingredients to form stiff dough may use more flour if needed. Don't forget to flour your rolling pin.

2On large clean work surface ( at least 24 inches x 32 inches) sprinkle flour and empty dough onto flour and roll when about 1/2 inch thick roll on rolling pin (can use juice can or large soup can if you haven't an rolling pin just be sure to clean and dry first and smear with flour), and flour surface and flip dough over. You just unroll it backwards. Roll out as thin as possible.

3Let set about 5 - 6 hours to dry. Cut wide or narrow, long or short. However you like them. Put in a boiling pot of what ever kind of broth you like i.e. Beef Chicken Turkey Ham Vegetable or what ever you like. Boil 15 - 20 min. depending on how think you rolled them and enjoy.

4In a hurry and don't have time to let them dry. Just stir up a batch and drop by small teaspoons I use only 1/2 a teaspoon as they swell greatly. Not quite as good as rolled out ones but works in a pinch. My kids think they are fun to eat.
