I adapted this from a recipe my mom gave me to make it less in fat and carbs, since she is diabetic. She said it tastes just as good as the original. Calorie: 513 Fat: 24 grams. Carbs 46 grams.

Ingredients For healthy sausage-apple rigatoni

  • 2 c
    dried ronzoni garden delight rigatoni pasta.
  • 8 oz
    spicy turkey sausage, halved lengthwise, cut into 1"-pieces
  • 1-1/2 lb
    golden delicious apples, cored, cut into 1/2"-thick slices.
  • 1/2 c
    light cream
  • 1/2 c
    crumbled gorgonzola cheese
  • 1 Tbsp
    fresh chopped basil

How To Make healthy sausage-apple rigatoni

    In a 4-quart dutch oven, cook pasta as directed, drain, set pasta aside. In same dutch oven, cook sausage until lightly browned, about 6 min. Add apples, cook until lightly browned, about 7 min. Stir in pasta, light cream, and Gorgonzola cheese. Heat through, garnish w/ basil.
