I have a few recipes for healthy lasagna, but this is the easiest one so far.

Ingredients For healthy ground turkey and spinach lasagna

  • 1/2 lb
    ground turkey breast
  • 1 Tbsp
    olive oil
  • 1
    26 oz jar marinara sauce
  • 1
    14-1/2 oz can diced tomatoes
  • 1
    9 oz pkg oven-ready lasagna noodles
  • 2 c
    part-skim ricotta cheese
  • 1
    8 oz pkg reduced-fat, shredded mozzarella cheese
  • 1
    10 oz pkg frozen, chopped spinach, thawed, squeezed dry
  • 4 Tbsp
    grated parmesan cheese.

How To Make healthy ground turkey and spinach lasagna

    Spray a lg skillet w/ cooking spray, place over med-high heat. Saute turkey in oil until browned. In lg bowl, combine cooled turkey, marinara sauce, and tomatoes.

    Spray a 4-quart slow-cooker w/ cooking spray. Pour 1 cup turkey mix into cooker. Layer on 3 noodles, ricotta cheese, mozzarella cheese, spinach and more sauce.

    Repeat layers 2 times, ending w/ sauce. Cover, cook on low for 2-1/2 hrs. Sprinkle w/ parmesan cheese.
