Ingredients For healthy, delicious tuna noodle casserole.

  • 2-1/2 c
    uncooked ronzoni healthy harvest rotini pasta
  • 2 tsp
    olive oil
  • 1
    green bell pepper, chopped
  • 1
    red bell peppper, chopped
  • 1 md
    onion, chopped
  • 8 oz
    fresh sliced mushrooms
  • 2 tsp
    minced garlic
  • 1
    10.75 oz can fa-free condensed cream of mushroom soup
  • 1
    8 oz container lite sour cream
  • 2 oz
    reduced-fat cream cheese, softened
  • 1/2 c
    fat-free milk
  • 1/2 tsp
    pepper
  • 2
    cans tuna in water, drained, flaked
  • 1/2 c
    reduced-fat, shredded sharp cheddar cheese
  • 2 Tbsp
    grated parmesan cheese
  • 12
    whole wheat crackers, crushed

How To Make healthy, delicious tuna noodle casserole.

    Heat oven to 350. Spray a 13" x 9" pan w/ cooking spray. Cook pasta as directed, drain.

    In lg skillet, heat oil over med-high heat. Add peppers, onion, mushrooms and garlic. Cook, stirring until veggies are tender.

    Stir in soup, sour cream, cream cheese, milk and pepper. Stir until well blended. Stir in tuna, pasta and cheddar cheese. Spoon mix into pan evenly. Sprinkle w/ parmesan cheese and crushed crackers. Bake, uncovered 40 min, or until bubbly.
