I love ramen. Maruchan is my fav brand. I wanted to add vegetables to make it a little healthier. This green ramen turned out great. The frozen vegetables were very handy and made this cook up quickly.

Ingredients For green ramen

  • 1 pkg
    ramen, chicken flavor
  • 3 Tbsp
    olive oil, extra virgin
  • 4 oz
    edamame, frozen
  • 1/2 c
    kale, frozen
  • 1/2 c
    yellow squash, frozen
  • 1/2 c
    zucchini, frozen
  • 1/2 c
    onion, diced
  • 1/2 c
    celery, frozen
  • 1 Tbsp
    jalapeno peppers, jarred
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    paprika
  • 4 oz
    guacamole

How To Make green ramen

  • 1
    Make the ramen according to package directions and set aside.

    Add the oil to a large skillet over med high heat.

    Add the edamame, kale squash, zucchini, onion, celery and jalapenos. I used frozen vegetables (except for the raw onion and the jarred jalapenos) because I had them in my freezer. You can use fresh if you want but it will take longer to cook each vegetable.

    Add the black pepper and the paprika.
  • 5
    Stir the vegetables until they thaw and the onion is soft but not browning.

    Once the onion is soft pour the liquid from the cooked ramen into the skillet with the vegetables. Stir it in.

    Turn off heat. Remove skillet from stove eye.

    Stir in the guacamole.

    Stir in the cooked ramen.

    Serve warm.
