I love ramen. Maruchan is my fav brand. I wanted to add vegetables to make it a little healthier. This green ramen turned out great. The frozen vegetables were very handy and made this cook up quickly.

Ingredients For green ramen

1 pkgramen, chicken flavor

3 Tbspolive oil, extra virgin

4 ozedamame, frozen
-
1/2 ckale, frozen
-
1/2 cyellow squash, frozen

1/2 czucchini, frozen

1/2 conion, diced
-
1/2 ccelery, frozen
-
1 Tbspjalapeno peppers, jarred

1/2 tspblack pepper
-
1/2 tsppaprika
-
4 ozguacamole
How To Make green ramen

1Make the ramen according to package directions and set aside.

2Add the oil to a large skillet over med high heat.

3Add the edamame, kale squash, zucchini, onion, celery and jalapenos. I used frozen vegetables (except for the raw onion and the jarred jalapenos) because I had them in my freezer. You can use fresh if you want but it will take longer to cook each vegetable.

4Add the black pepper and the paprika.

5Stir the vegetables until they thaw and the onion is soft but not browning.

6Once the onion is soft pour the liquid from the cooked ramen into the skillet with the vegetables. Stir it in.

7Turn off heat. Remove skillet from stove eye.

8Stir in the guacamole.

9Stir in the cooked ramen.

10Serve warm.
