I always have left over pasta ,plus a little bit of this and that in my refrig or freezer.. Time to clear it out I say, and this is what I ended up with.. Great left over dish.. LOL But I think is is now going to be a dish to go too..

Ingredients For green peas and penne pasta with light cheese sauce

  • 1 c
    chopped red and yellow peppers
  • 1/4 c
    diced onion
  • 2 Tbsp
    olive oil
  • 2 c
    cooked penne pasta
  • 1 c
    peas
  • 1 c
    low-sodium chicken broth
  • 1 Tbsp
    corn starch
  • 3 oz
    cheddar cheese

How To Make green peas and penne pasta with light cheese sauce

  • 1
    Saute peppers and onion in olive oil using non-stick pan over med heat for 3-5 minutes.

    Stir in pasta and peas.

    Mix chicken broth and cornstarch in a microwaveable bowls safe dish.

    Microwave on high for 1 minute. Stir and microwave for additional minutes or until sauce bubbles.

    Add Cheese and pour over pasta and peas mixture and enjoy.
