In recent months, I have absolutely fallen in love with frozen gnocchi. It's so easy and delicious! I'm always looking for new ways to make it. This one is absolutely delicious, and it goes from prep to table in 30 minutes!

Ingredients For gnocchi with sausage and white beans

  • 1 lb
    smoked sausage, brand and variety of your choice, (i use eckrich turkey smoked sausage to cut down on fat)
  • 1 Tbsp
    olive oil
  • 2 clove
    garlic, minced
  • 1 sm
    onion, diced
  • 1 can
    (15 oz.) italian style diced tomatoes
  • 1 can
    (15 oz.) cannellini beans, rinsed
  • 1 tsp
    dried oregano
  • 1 tsp
    dried basil
  • 2 c
    fresh spinach, chopped
  • salt & pepper to taste
  • 1 c
    mozzarella cheese
  • 3 Tbsp
    fresh chopped parsley
  • 1/4 c
    fresh parmesan cheese

How To Make gnocchi with sausage and white beans

    Cook gnocchi according to package directions and set aside.

    Heat oil in a large, deep skillet. Add sausage and onion; brown for 5 minutes.

    Add garlic and saute for 30 seconds longer.
  • 4
    Add tomatoes and basil, oregano, spinach, beans and gnocci and stir over medium heat until heated through, the flavors are blended and spinach is wilted.

    Sprinkle with shredded mozzarella. turn down the heat and cover until cheese melts.

    Serve on plates or in pasta bowls with crusty bread. Garnish with chopped fresh parsley and shaved or shredded parmesan.
