Ingredients For gnocchi and white beans

  • 1 pkg
    gnocchi
  • 1 can
    cannelini beans
  • 1 can
    italian diced tomatoes
  • 2 Tbsp
    olive oil
  • 2 clove
    garlic
  • 1
    diced onion
  • 1/2 c
    mozzarella cheese
  • 1/4 c
    parmesan cheese
  • 1/2 c
    reserved water from gnocchi
  • 1 tsp
    each basil oregano rosemary
  • 6 oz
    frozen spinach
  • 2 oz
    tomato paste

How To Make gnocchi and white beans

    Heat oil in pan and sweat the onions and garlic
  • 2
    boil gnocchi as directed on package and drain reserving 1/2- 1 cup of the starch water from cooking
  • 3
    add gnocchi to the onion and garlic and pan fry until light golden brown.

    Add in beans, tomatoes and tomatoes paste and thawed spinach. Pour 1/2 c of starch water and mix gently. It should be a bit loose but not a lot of liquid. Add more of the starch water as needed.

    Simmer off for 5 minutes on low. Stir occasionally

    Turn heat off and Sprinkle the grated mozzarella and parmesan on top. Cover and let sit for 5 minutes

    Eat!
