Ingredients For gnocchi and white beans

1 pkggnocchi
-
1 cancannelini beans
-
1 canitalian diced tomatoes

2 Tbspolive oil
-
2 clovegarlic
-
1diced onion
-
1/2 cmozzarella cheese
-
1/4 cparmesan cheese
-
1/2 creserved water from gnocchi
-
1 tspeach basil oregano rosemary
-
6 ozfrozen spinach
-
2 oztomato paste
How To Make gnocchi and white beans

1Heat oil in pan and sweat the onions and garlic

2boil gnocchi as directed on package and drain reserving 1/2- 1 cup of the starch water from cooking

3add gnocchi to the onion and garlic and pan fry until light golden brown.

4Add in beans, tomatoes and tomatoes paste and thawed spinach. Pour 1/2 c of starch water and mix gently. It should be a bit loose but not a lot of liquid. Add more of the starch water as needed.

5Simmer off for 5 minutes on low. Stir occasionally

6Turn heat off and Sprinkle the grated mozzarella and parmesan on top. Cover and let sit for 5 minutes

7Eat!
