garlic parmesan shrimp scampi with penne

What if shrimp scampi, penne pasta, and garlic Parmesan were combined? I created this recipe, the tenth garlic Parmesan recipe of mine, and left out lemon juice and cooking wine.

Ingredients For garlic parmesan shrimp scampi with penne

  • 12 oz
    dry penne pasta
  • 1 c
    panko breadcrumbs
  • 4 tsp
    garlic powder, divided
  • 1 c
    grated Parmesan cheese, divided
  • 30 lg
    shelled shrimp, peeled and deveined
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    margarine
  • 1 lg
    vidalia onion, peeled and chopped
  • 2 Tbsp
    minced garlic
  • 1 c
    chicken broth, divided
  • 1 c
    half and half
  • 1 bottle
    garlic Parmesan sauce, divided
  • 1 c
    heavy cream

How To Make garlic parmesan shrimp scampi with penne

    Cook penne pasta according to package directions. Drain and rinse in cold water; set aside.

    In a large ziplock bag, combine the breadcrumbs, 2 teaspoons garlic powder, and 1/2 cup grated Parmesan cheese.

    Add the shrimp, zip the bag, and shake it for 30 seconds. Heat the olive oil in a large skillet over medium heat. Cook the shrimp until golden brown, about 2 minutes per side.

    Remove from heat. Transfer the shrimp to a large plate and set aside.

    Heat the margarine in a medium saucepan over medium heat. Saute the chopped vidalia onion and minced garlic for 2 minutes until tender.

    Add 1/2 cup chicken broth, the half and half, 1/2 the bottle of garlic Parmesan sauce, and remaining garlic powder. Simmer for about 5 minutes.

    Stir in the heavy cream, remaining chicken broth and remaining garlic Parmesan sauce and simmer for 10 minutes more or until thickened.

    Add the cooked penne pasta and shrimp mixture and mix well. Simmer again about 3 minutes. Sprinkle with remaining grated Parmesan cheese before serving.
