This is a really summery, citrusy pasta salad, that I found recently, and I fell instantly in love with it!

Ingredients For garden orzo salad
- FOR THE DRESSING

2lemons, zested and juiced

2oranges, zested and juiced
-
1/2 crice wine vinegar

1/2 capple cider vinegar
-
2 cfresh parsley leaves
-
2 cfresh basil leaves
-
2 cextra virgin olive oil
-
1 pinchsalt
-
1 pinchpepper
- FOR THE SALAD

4 corzo pasta, uncooked

salt, for water
-
5ears corn, kernels removed
-
5stalks celery, diced
-
1cucumber, seeded and diced
-
2 ptcherry or grape tomatoes
How To Make garden orzo salad

1For the Dressing: In a food processor or blender, add lemon zest and juice, orange zest and juice, vinegars, parsley, basil, and oil. process until smooth and season with salt and pepper. Set aside.

2Cook orzo as directed on package.

3In a large mixing bowl, add corn kernels, celery, cucumber, and tomatoes.

4When orzo is cooked, drain and rinse under cold water; drain well.

5Add cooled orzo to veggies in bowl. Add dressing to salad and toss well. Season with more salt and pepper, if needed.
