I came up with this for the WFC this year added a few tweaks to my usual mac and cheese.

This combination of mac and cheese with lobster is a great idea. Then to fry it on top of that? Oh my - it's divine! The white cheddar and the Gruyere cheese pair well together. The Panko crumbs add a nice crunchiness, while the cayenne adds a touch of heat. This is one great tasting dish!

Ingredients For fried lobster mac and cheese

2 celbow macaroni

2 Tbspbutter
-
2 Tbspflour
-
1/2 tspeach salt and pepper

1/2 tspnutmeg

1 lglobster tail meat
-
2 lgscallions, use the green parts, chopped
-
1 cheavy cream
-
1 cwhole milk
-
2 cwhite cheddar cheese, grated
-
6 ozcream cheese
-
1 cguyere, grated
-
3 lgeggs
-
2 Tbspwater
-
2 cpanko bread crumbs
-
1/2 tspeach salt pepper garlic powder, onion powder, more if you like

1 tspdry parsley
-
1 tspcayenne
-
oil to fry
How To Make fried lobster mac and cheese

1You will want to have a pan that will make perfect sized squares, I used two 10x 5 loaf pns that I sprayed with pam.

2Put a quart of salted water on medium high and when it comes to a boil add your macaroni and cook per package directions, then drain well.

3While macaroni cooks melt butter in a heavy sauce pan, add the flour, salt pepper, nutmeg and stir to incorporate well.

4Add the chopped scallions and chopped lobster meat, stir for minute.

5Stir in milk a little at a time using a spatula for this, then add in cream.

6Remove from heat, put in cheeses and stir to melt.

7Pour into prepared pans, it doesn't look like much but each pan will yield 8 squares.

8Bake at 375° for 20 to 25 minutes or until starting to brown and set.

9Let cool and set in fridge until it is set enough to turn the pan upside down and release the whole pan in one piece. Might take an hour, or you could set it in ice to speed it along.

10Cut down the middle lengthwise, then crosswise to make 8 squares for each pan.

11Whip eggs with water, set aside

12Mix panko bread crumbs with salt, pepper, parsley, cayenne, onion and garlic powder, set aside.

13Heat oil to 350°

14Roll mac squares first in the egg wash, then roll in bread crumbs.

15Fry in hot oil until golden brown, drain on wire rack.
