five cheese ravioli with spinach

My husband loves the mezzaluna cheese ravioli al forno at Olive Garden but they don't have it all the time. This is my version. The spinach is my touch, it's not in theirs but we love it in pasta sauces.

Ingredients For five cheese ravioli with spinach

  • 1
    lb fresh spinach, washed
  • 2 Tbsp
    oil, approximately ( i use olive oil)
  • 1 clove
    garlic, sliced
  • 2 Tbsp
    flour
  • 1/2 c
    milk, approximate
  • 1 c
    ricotta cheese
  • 1 c
    marinara sauce
  • oregano, dried or fresh to taste
  • 16 oz
    cheese ravioli, cooked
  • 1/2 c
    italian mixed shredded cheese

How To Make five cheese ravioli with spinach

    Heat oil in skillet
  • 2
    add sliced garlic and cook until lightly browned, remove to drain
  • 3
    add fresh spinach and saute until tender, remove, leaving oil in pan
  • 4
    add more oil to make 2 tablespoon oil if necessary, add 2 tablespoon flour, cook for 1 minute
  • 5
    add enough milk to make a white sauce, salt and pepper as necessary
  • 6
    stir in marinara sauce, ricotta, and oregano
  • 7
    add spinach back in
  • 8
    add cooked ravioli, heat through and top with Italian cheese mix
  • 9
    serve topped with browned garlic if desired
