Ingredients For fettucine asparagus with shiitake & smoked bacon

6 ozbacon, smoked and cut into 1/2" dice

4 Tbspolive oil

6 ozshiitake mushrooms, sliced

1 lbasparagus, cut in 2" pieces

12 ozfettucine, fresh

1 Tbspthyme, fresh chopped

2 Tbsporegano, fresh chopped

"just a pinch" of salt
-
"just a pinch" of pepper
How To Make fettucine asparagus with shiitake & smoked bacon

1Saute bacon in skillet until crisp, remove to a plate. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened.

2Lightly blanch the asparagus.

3Cook the pasta briefly in boiling salted water. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper.
