This homemade Alfredo sauce is rich, creamy, and very thick. We love the minced garlic flavor in the sauce. Adding broccoli, tomatoes, and green onions gives the heavy pasta dish a bit of freshness. You could even add chicken or shrimp to this dish too. An easy weeknight pasta dinner.

Ingredients For fettuccine alfredo with vegetables

1 pkgfettuccine noodles (12 oz)

homemade creamy Alfredo sauce (see below)

2 bunchfresh broccoli

1firm tomato
-
2green onions
-
black pepper
-
fresh Parmesan cheese as a garnish

1 stickbutter or margarine equivalent

8 ozcream cheese

2 cmozzarella and Parmesan blend

1 - 1 1/4 cmilk

1/2 csour cream
-
3 clovefresh garlic, minced

How To Make fettuccine alfredo with vegetables
Test Kitchen Tips
We boiled the broccoli for 5 minutes.

1Cook noodles according to package directions, or if you're inclined to do so, make your own. When noodles are done drain well.

2Prepare fresh broccoli to be cooked. I always leave mine somewhat firm.

3Prepare your other veggies... dice tomato neatly and chop up green onion. If using fresh garlic, chop that up too.

4For the sauce, melt butter/margarine first. I use Best Life buttery spread as it has no trans fat or hydrogenated oils.

5Then add in cream cheese and garlic.

6Keep the heat on low to medium and stir constantly unless it will burn.

7Add in sour cream and milk and wait until everything is well melted together.

8Then add the cheese.

9Once the cheese is thoroughly melted, add pepper to taste and a splash of lemon. Serve immediately.

10Pile noodles on a plate or in a bowl. Toss on broccoli and then cover with sauce. Sprinkle diced tomato and green onion on top. Squeeze a bit of lemon juice on and garnish with cheese. Yum!
