We love Italian food and, in our area, we are surrounded by incredible, multi-generational Italian cooks. This is a recipe that is well-known in our community and is just perfect for a quick dinner. Gnocchi should be light and enjoyable to eat. If they are heavy, hard or chewy, you need to find another recipe. Topped with your favorite pasta sauce, Alfredo sauce or browned butter sage sauce, you will love the light, airy texture of these little gems.

Ingredients For feather light ricotta gnocchi, quick & easy

  • 15 oz. ricotta cheese
  • 3/4 - 1 cup flour
  • 1 1/4 cup parmesan cheese, shaker can variety works well
  • 2 eggs, beaten
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

How To Make feather light ricotta gnocchi, quick & easy

    Place all ingredients in a large bowl and mix until blended.

    Lightly flour work area. If dough is sticky, pick up a small bit of bench flour. Take 1/3 of the dough and roll into a 1 - 1 1/2" wide rope. Cut rope to desired width and place on floured cookie sheet. Repeat with remaining dough. Cover with Saran Wrap and refrigerate until ready to use.

    When ready to use, bring a large pot of salted water to a gentle boil. Carefully add 1/3 - 1/2 of the gnocchi to the pot. Stir briefly to prevent sticking. Boil gently until they float, 3-5 minutes. Drain. Serve with your favorite sauce.
