This is more or less my own concoction that I've improved on over the years. It's one of my favorites, and leftovers--if there are any--do freeze well.

Ingredients For ellen's terrific spanish rice

1 lbground chuck

1 mdonion, diced

1 lggreen pepper, diced

2 pkgboil-in-bag rice

1 lgcan stewed tomatoes or chopped tomatoes

1 tspchili powder

2 tspworcestershire sauce

1 tspsalt
-
1/4 tsppepper
-
1 1/2 cshredded cheddar or mexican blend shredded cheese
How To Make ellen's terrific spanish rice

1In large skillet, brown the ground chuck with the onion and green pepper; drain. Open two pouches of boil-n-bag rice and empty into pan with meat mixture.

2Add remaining ingredients except cheese. Fill empty tomato can with water and pour over all. Stir and mix well over medium-high heat until boiling.

3Turn heat to low and simmer about 20 minutes, covered, until all liquid is absorbed and ingredients are hot. Sprinkle with cheese, cover, and cook just until cheese melts.
