ellen's broccoli pasta with creamy tomato sauce

It all started when I noticed that I had a fresh tomato and some fresh broccoli from the organic delivery company that I needed to use very soon. I had all the other ingredients on hand, so I threw this together and was very pleasantly surprised. It is very easy and very yummy!

Ingredients For ellen's broccoli pasta with creamy tomato sauce

4 ozpasta shells, tiny, uncooked

1 cbroccoli florets
-
2 1/2 cwater
-
1 lgtomato, chopped
-
1/2 conion, chopped
-
1/2 tspdried basil
-
1/2 tspdried oregano
-
1/2 tspgarlic powder
-
1/2 tspdried parsley
-
2 tspolive oil
-
salt and pepper to taste
-
grated parmesan cheese
How To Make ellen's broccoli pasta with creamy tomato sauce

1In a medium saucepan bring water to boil over high heat. Add pasta and cook over low heat about 3 to 4 minutes, stirring occasionally.

2Stir in broccoli and cook for another 5 minutes, until pasta is al dente. Drain, reserving 1/2 cup of the water.

3Heat oil in a medium saucepan and saute the chopped onion until translucent.

4Add the chopped tomatoes, salt, pepper, and 1/2 cup of the pasta-broccoli water. Cover the saucepan and simmer for 5 minutes. Uncover, increase the heat to high, and cook for another 5 minutes, or until most of the water has evaporated.

5Remove from heat and season with basil, parsley, garlic and oregano.

6Stir in the cooked pasta and broccoli mixture and mix well to coat.

7Sprinkle with Parmesan cheese and serve while hot.
