A different taste for the usual sauce. You can also throw in zucchini if you like. I sometimes use zucchini noodles instead of pasta.

Ingredients For eggplant in red sauce

  • 1 can
    tomatoes
  • 1 md
    eggplant
  • pinch
    salt and pepper
  • 1 sm
    onion
  • 2 Tbsp
    evoo

How To Make eggplant in red sauce

    Sauté your onion in evoo. Take skin off eggplant and cut in cubes. Add eggplant to onions (add more evoo if needed). Throw in your can of tomatoes (blended or crushed).

    Bring to a boil and let simmer until eggplant is soft. Add salt and pepper to taste.

    Boil water for pasta and add your favorite pasta. When pasta is done pour your sauce over and enjoy!
