Tons of flavor, this is a hearty dish that can be on your table any time. Serve over your favorite pasta, rice, or polenta. Add a salad and some toasty garlic bread and you have a meal fit for a king!

Ingredients For easy pork ragu and pasta

  • salt and pepper, to taste
  • 2 lb
    pork shoulder roast, cut into large pieces
  • 2 Tbsp
    olive oil
  • 6 clove
    garlic, peeled
  • 2 can
    stewed tomatoes
  • 2 Tbsp
    tomato paste
  • 2
    fresno peppers, halved and seeded (any pepper with mild heat or crushed red pepper)
  • 2 Tbsp
    dark soy sauce
  • 2 tsp
    Italian seasoning, or more to taste
  • 1 tsp
    dried thyme
  • 1 Tbsp
    sugar
  • 16 oz
    penne pasta

How To Make easy pork ragu and pasta

    Set your Instant Pot to saute. Salt and pepper your pork liberally. Add the olive oil, pork and garlic to the Instant Pot. Cook pork until browned on all sides.

    Add all remaining ingredients except pasta to the pot and secure the lid. Set to high pressure and cook for 75 minutes.

    When the ragu is about 15 minutes from done, cook the pasta according to the package directions.

    When the ragu is done, release the pressure manually and remove the lid. Using two forks, shred the pork in the sauce. If the mixture seems too runny, put the Instant Pot on saute and let simmer until desired consistency. Taste for spice adjustment.

    Serve the easy pork ragu over the top of the pasta and and add the Parmesan cheese, if desired.
