easy, healthy beef stroganoff

I have quite a few recipes for stroganoff, this one is easy to make and healthy. You CAN use ground beef, just make sure it's the leanest, and that you drain the ground beef in the skillet before adding sour cream or it will be greasy...yuck!

Ingredients For easy, healthy beef stroganoff

  • 12 oz
    no yolk "egg" noodles, cooked, drained, kept warm
  • 6 oz
    sliced fresh mushrooms
  • 1 md
    onion, chopped
  • 1/4 c
    butter
  • 2 lb
    ground turkey breast
  • 4 Tbsp
    flour
  • 2 c
    beef broth
  • 1 c
    light sour cream
  • salt and pepper to taste

How To Make easy, healthy beef stroganoff

    In lg skillet over medium heat, saute mushrooms and onion in 2 tbsp butter until soft. Remove from skillet.

    Melt remaining butter in skillet. Cook ground turkey breast until fully browned. Mix in flour, stirring. Stir in broth. Cook stirring until thickened. Add mushrooms and onion back to skillet.

    Stir in sour cream. Season w/ salt and pepper. Cook, stirring until hot. Serve over warm noodles.
