delicious quick & easy tuna pasta with veggies
I get tired of the same old; same old when it comes to tuna. I saw this recipe and tweaked it so that it contains ingredients that I enjoy. Instead of it being like the run of the mill tuna casserole; it contains extra veggies (mushrooms; red bell pepper, onions. peas and spinach) and Rotini pasta. It doesn't take long to prepare; and you make it on top of the stove---no heating up the oven or kitchen.

2 Tbspbutter or margarine, divided

2 mdcarrots, chopped

1/2 mdsweet onion, chopped

1/2 mdred bell pepper, chopped

1 jar(small to medium jar), sliced mushrooms, drained

1 can(5 ounces ) albacore white tuna in water, drained & flaked

1 cfresh baby spinach
-
1/2 c1/2 cup frozen green peas
-
1 1/2 cuncooked, rotini, or other spiral pasta

1 1/2 Tbspall-purpose flour or corn starch, dissolved in water

1/3 chalf-and-half cream
-
1/4 cshredded parmesan cheese
-
1/2 tspsalt
-
1/4 tsppepper
How To Make delicious quick & easy tuna pasta with veggies

1In a large skillet, heat 1 tablespoon butter over medium-high heat. Add carrots, onion, red pepper and mushrooms. Cook and stir until tender, 8-10 minutes. Add tuna, spinach and peas; cook until spinach is just wilted, 2-3 minutes.

2Meanwhile, cook pasta according to package directions for al dente. Drain pasta, reserving 1 cup pasta water.

3In a large bowl, place pasta and tuna mixture; toss to combine. Wipe skillet clean.

43. In the same skillet, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes, adding reserved pasta water if needed. Stir in cheese, salt and pepper. Pour over pasta; toss to coat. In the same skillet, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes, adding reserved pasta water if needed.

5Stir in cheese, salt and pepper. Pour over pasta; toss to coat.
