I love this soup especially since you are using up some of the abundance of zucchini. This is so tasty and a real tummy warmer.

Ingredients For creamy minestrone soup

  • 1 1/2 c
    rotini macaroni
  • 1 box
    10 oz. chopped frozen spinach
  • 2 can
    beef broth
  • 1 can
    tomato soup
  • 1
    small can tomato paste
  • 4 c
    milk
  • 2 c
    zucchini , sliced
  • 1/4 tsp
    garlic powder
  • 2 Tbsp
    pimento, chopped
  • 1 tsp
    dried oregano
  • 4 slice
    fried and crumbled bacon
  • 2 c
    shredded cheddar
  • parmesan cheese, to taste

How To Make creamy minestrone soup

  • 1
    Cook Rotini until firm, rinse and drain. Cook spinach in beef broth for 10 mins. Add tomato soup, paste, milk, cooked Rotini, zucchini, garlic powder, oregano and cook additional 15 mins. Add cheddar and pimento. Before serving add bacon and parmesan.
