creamy chicken and mushroom spinach skillet

I wanted to do something with mushrooms and bell peppers, so I saw another recipe and decided to add in some extra ingredients to make it my own. What a delight it was in the end! I did add cooked spinach to complete the skillet dinner.

Ingredients For creamy chicken and mushroom spinach skillet

  • 2 Tbsp
    olive oil
  • 2 Tbsp
    butter
  • 1 lg
    yellow onion
  • 1/2 md
    green bell pepper
  • 8 oz
    sliced mushrooms
  • 10 oz
    cream of chicken or mushroom soup
  • 1/2 can
    chicken broth or water
  • 1 lb
    linguini pasta
  • 1 lb
    boneless chicken breasts, cooked and diced

How To Make creamy chicken and mushroom spinach skillet

    In a large, deep skillet, melt the olive oil and butter over med/high heat. Add onion and green bell pepper and saute until softened. Add in mushrooms. Continue to stir until browned.

    Reduce heat to medium. Add in can of cream of soup followed by 1/2-3/4 can of broth or water. Stir to combine.

    Cook up pasta to al-dente. Drain and add to skillet. Add chicken. Using tongs, thoroughly toss until completely combined.
