This chili mac casserole version was brought to a potluck and this is my version of that recipe. It never fails to disappear. With 2 pounds of beef, you're sure to have more beef than beans in this dish. It tastes even better on day 2. Lightly spiced, add a green salad and some Fritos on your plate for a full meal.

Meaty and cheesy, this mac and beef casserole is full of flavor. Filled with ground beef and pasta, it's a very hearty meal. Taco seasoning and cumin add the flavor you associate with a bowl of chili. Once baked, the shredded cheese on top is nice and melted. And Freda is right, leftovers are just as good.

Ingredients For chili mac and beef casserole

  • 1 1/2 c
    elbow macaroni
  • 2 lb
    lean ground beef
  • 1/2 md

    chopped green chiles, undrained (4 oz)
  • 1 can
    chili with beans (15 oz)
  • 1 can
    chili without beans (15 oz)
  • 3 Tbsp
    water, divided
  • 1 pkg
    taco seasoning (1 oz)
  • 2 tsp
    cumin
  • 1 1/2 tsp
    salt
  • pepper, to taste
  • 2 c
    shredded Mexican cheese blend
  • black olives, for serving
  • sour cream, for serving
  • green onions, for serving
  • tortilla chips, for serving
  • corn chips, for serving

How To Make chili mac and beef casserole

  • Spray a baking dish with non-stick spray.

    Preheat oven to 350 degrees F. Spray your 9X13 dish with non-stick spray and set aside.
  • Cook macaroni according to the package directions.
