You can use store bought pesto but I always make my own.

Ingredients For chicken with pesto fettucine

  • 2 c
    fresh basil
  • 3 Tbsp
    pine nuts
  • 4 clove
    garlic, minced
  • 1 Tbsp
    lemon juice
  • salt
  • 1/2 c
    plus 2 Tbsp olive oil, divided
  • 12 oz
    fettuccine
  • 4
    boneless skinless chicken breasts, pounded to an even inch
  • pepper
  • paprika
  • 2 Tbsp
    butter
  • 1/2 c
    Parmesan cheese

How To Make chicken with pesto fettucine

  • 1
    Place the basil, pine nuts, garlic, lemon juice, and some salt in a food processor. Drizzle in 1/2 cup olive oil while the pesto is processing. Remove from food processor and set aside.

    Cook the fettuccine in boiling salted water until al dente; Drain. Mix the pesto with the fettuccine.

    Season the chicken breast with salt, pepper, and paprika. Add the remaining oil and the butter to a skillet and get it hot. Cook the chicken for 4 minutes on each side. Serve with the pesto fettuccine and top with Parmesan cheese.
