chicken pesto pasta
My basil is very prolific this year, so I made some pesto using a recipe I posted a long time ago. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/walnut-pesto-kosher.html Came up with this for dinner using the pesto and some left over rotisserie chicken.

Ingredients For chicken pesto pasta

4 ozuncooked pasta
-
4-6 ozcooked chicken, diced
-
1/2 -3/4 cpesto
-
black pepper, to taste

Parmesan cheese, to serve
How To Make chicken pesto pasta

1Cook pasta of choice according to package directions. When it's almost done, drain pasta and save about 1/2 cup pasta water.

2Toss chicken and pesto together into the still-warm pasta pot. Add drained pasta. You may want to add a bit of the reserved pasta water.

3Sprinkle with some black pepper and parmesan cheese, if desired. Serve.
