chicken meatball and broccoli macaroni bowl
When I was first married in 1993, I came across a chicken cook book in the book store. It had a picture of a dish that looked like this on the cover. I remember thinking it looked so tasty and I wanted to make it, but I didn't have enough money for the fancy cook book. When I got home, I made up this recipe which is what I imagined would be in it based on what the picture looked like. I never did acquire that cook book and I can't even remember what it was called, but I've been making this dish ever since I first saw that picture on the cover!

Ingredients For chicken meatball and broccoli macaroni bowl

1 lbcooked chicken or turkey meatballs (storebought or your homemade)

2 Tbspolive oil

4 cloveminced garlic

1 cchicken broth
-
8 ozdry macaroni

3 cfresh broccoli florets
-
2 Tbspbutter
-
salt and pepper to taste

1/2 cgrated parmesan for garnishing

1/4 cfresh chopped parsley for garnishing
How To Make chicken meatball and broccoli macaroni bowl

1Cook the macaroni according to package directions. Towards the end of cooking time on the pasta, add the broccoli florets to the pasta pot and cook about 3-5 minutes more. While the pasta is cooking, start heating the meatballs and garlic as follows.

2Add the 2 tablespoons of oil to a deep, nonstick skillet over medium and cook the meatballs until browned. Add in the garlic and saute for 30 seconds or so.

3Add the one cup of the chicken broth and bring to a simmer. Continue to simmer and allow to reduce while you while you finish preparing the pasta and broccoli.

4Drain the macaroni and broccoli.

5Turn off the heat and stir the macaroni mixture into the skillet of meatballs along with the butter and 1/2 cup of parmesan. Stir until well combined and cheese melts.

6Season to taste with salt and pepper. Spoon into a bowl and garnish with more parmesan and fresh chopped parsley.
