Everyone has heard of clam casino. I love any dish that contains bacon. I thought I would make a dish reminiscent of it. Instead of clams, I used chicken in this dish. I added some Italian herbs, white wine, and chicken stock. The crushed red pepper flakes give it a little kick. It is topped off with parmesan cheese. I hope you all enjoy my version of this dish.

Ingredients For chicken casino pasta

  • 4 clove
    pressed garlic medium cloves 1 for chicken
  • 1 c
    chopped red bell pepper
  • 1 c
    diced onion
  • 8 oz
    bacon regular or thick cut
  • 4 Tbsp
    butter
  • 3/4 c
    white wine
  • 1 c
    chicken stock +2 tablespoons for arrowroot or cornstarch
  • 1 Tbsp
    italian seasoning
  • 3/4 tsp
    red pepper flakes
  • salt and pepper to taste ( i used garli salt)
  • 11/2 - 2 lb
    chicken cutlets cut into 2 inch pieces
  • 2 Tbsp
    olive oil, extra virgin
  • 4 c
    cooked small pasta like penne or ditali
  • 1/3 c
    parmesan cheese for serving
  • 1 tsp
    optional fir thickening arrow root or corn starch

How To Make chicken casino pasta

  • 1
    Place chopped bacon, red bell pepper, and onion into a large skillet.

    Cook ingredients on medium - medium high until bacon is fully cooked. Stir occasionally.

    When mixture is cooked through. Add in 3 cloves of pressed garlic. Cook for one minute. Drain off most of the bacon grease. Move mixture to a platter and set aside.

    Into the skillet. Add 2 tablespoons of Olive oil. Add in the cut up pieces of chicken. When chicken is almost cooked through and no pink shows. Add in the remaining press clove of garlic. Stir Chicken and garlic for one minute over medium heat.

    Add the pepper onion bacon mixture back into pam. Stir well.

    Add in the wine, Italian seasoning, red pepper flakes salt and pepper to taste

    Cook mixture until wine is reduced in half. Add in the chicken stock and butter. Bring to a boil. Reduce heat to medium and cook for 5 to 10 minutes. Remove pan from heat.

    Mix arrowroot or cornstarch with 1-2 tablespoons of chicken stock. Add to the chicken mixture in pan . Stir frequently until thickened.

    Add in the pasta and combine well. Cook 5 minutes. Salt and pepper to taste. Serve with grated Parmesan cheese.
