If you love mac 'n cheese, then you will love this. The added chicken and broccoli makes it a complete meal that's delicious, filling and satisfying. The parmesan brings just the right amount of saltiness to the recipe, not too much, though. It's just the right amount, in my opinion, but you can always add a little salt if you feel you need more when you serve it. This recipe is so simple and not so time consuming.

Ingredients For chicken, broccoli & cheesy pasta

  • 1-1/2 c
    dry elbow macaroni
  • 3 c
    fresh broccoli florets
  • 2
    chicken breasts, cut into bite sized pieces and cooked in a fry pan in a few tablespoons of oil
  • 4 Tbsp
    butter
  • 1/4 c
    all purpose flour
  • 1-1/4 c
    chicken broth
  • 1-1/4 c
    milk (i use 2%)
  • 1 tsp
    garlic powder
  • 1/4 tsp
    pepper
  • 2 c
    shredded cheddar cheese
  • 1/2 c
    shredded parmesan cheese (not grated)

How To Make chicken, broccoli & cheesy pasta

    Cook macaroni according to package instructions until al dente. Drain and set aside.

    Cook broccoli until tender. Drain and set aside.

    Melt butter in a skillet over medium heat. Add flour and whisk. Cook for 1 minute, whisking constantly.

    Add chicken broth, milk, garlic powder, and pepper. Whisk together. Continue whisking until mixture begins bubbling and starts to thicken. Remove from heat. (If sauce is too thick and stiff, add another ¼ cup of milk and another ¼ cup of chicken broth.

    Stir in cheddar cheese and parmesan cheese until melted. Add macaroni, broccoli and cooked chicken. Stir until fully coated and combined.
