My mother made this recipe when I was a little girl and it has always been a favorite of mine. It is my go to recipe when I can't think of anything to make and it works great for a potluck party or a casual meal for company. I have tweaked it to make it my own but my tweaks have only enhanced it. All you need to accompany this delicious meal is a crisp green salad and a hot crunchy roll. I hope you enjoy this wonderful one-pot meal that is just down home good eats!

Oh gosh, we loved this cheesy ooey gooey hamburger casserole recipe! It's the perfect dish for a quick and tasty meal. We love the flavor the fresh veggies add and the tons of cheese on top pulls the dish together. A great dinner recipe on a busy weeknight.

Ingredients For cheesy hamburger casserole

  • 1 1/2 lb
    ground beef 85-15%
  • 1 sm
    onion, yellow, chopped
  • 1/2 lg
    green bell pepper, chopped
  • 2 stalk
    celery, chopped
  • 1 can
    diced tomato, 1 lb 12 oz.
  • 1 can
    diced tomato, 14 oz.
  • 1 tsp
    salt or to taste
  • 1/4 tsp
    pepper or to taste
  • 1/2 - 2/3 box
    of a 1 lb. box of rigatoni pasta cooked according to package instructions. don't forget to add salt to the water.
  • 1 bag
    cheddar cheese, finely shredded, 2-3 cups

How To Make cheesy hamburger casserole

    Brown meat over meduim heat and then add all chopped veggies and season with salt and pepper.

    Puree the 1 LB 12 OZ can of diced tomatoes (Whole Peeled Tomatoes can also be used if desired) and add to hamburger mixture. Add the 14 oz. can of diced tomatoes and stir. Cover and simmer until veggies are tender. Taste and add more salt and pepper if necessary.

    While the sauce is simmering, cook the rigatoni in salted water according to box instructions. Do not overcook the pasta because it will continue to cook when added to the sauce. Drain and add to the hamburger mixture incorporating well.

    Sprinkle liberally with grated cheddar cheese (I use either mild or medium), cover and simmer until cheese is melted.

    Hint: I use an electric skillet to prepare this recipe but you can also use a large skillet keeping in mind that it makes a good amount. This is really good for company or to take to a potluck party. Also good for leftovers. Side Dishes are just a green salad and nice crunchy rolls just out of the oven.
