  • 1 lb
    rotini pasta, cooked
  • 2-3 c
    cooked, chopped chicken breast
  • 1 pkg
    (10 ounces) frozen spinach, thawed and squeezed dry
  • 2 Tbsp
    extra virgin olive oil
  • 2 Tbsp
    butter
  • 1/2
    onion, finely chopped
  • 2-3
    garlic cloves, minced
  • 1
    (15 ounces) container ricotta cheese
  • 1-1/2 c
    chicken stock
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1-1/2 c
    shredded mozzarella cheese
  • 1 c
    grated parmesan cheese

How To Make cheesy chicken and rotini bake

    In a large skillet over medium heat, melt the butter with the extra virgin olive oil and saute the onion and garlic. Slowly add the chicken stock and continue stirring.

    Turn the heat to low and add spinach and Ricotta cheese and stir. Season with salt and pepper, stir and turn off heat. Add the pasta and chicken to the skillet. Toss well and then pour the mixture into a 9 X 13 inch baking dish.

    Top with the cheeses and bake at 350 degrees for 15 to 20 minutes. Do not overcook.
