Ingredients For cheesy cauliflower and pea pasta

  • 8 oz
    penne or any small tube pasta
  • 1/4 c
    olive oil
  • 4 clove
    garlic minced
  • 1/2
    head of cauliflower cut into florets
  • 2 c
    chicken stock
  • 1 c
    frozen peas
  • 4
    scallions chopped
  • salt and pepper
  • 1/3 c
    heavy cream
  • 1 c
    finely grated parmesan cheese
  • 2 Tbsp
    butter

How To Make cheesy cauliflower and pea pasta

    Cook the pasta in a pot of boiling water. Drain and add a little oil to the pasta and set aside.

    Add the remaining olive oil to the pot. Add the onion and saute until softened. Add the garlic and cook 30 seconds. Add the cauliflower and chicken stock. Bring to a boil. Let the stock reduce by half and then add the scallions and peas. Stir in the pasta.

    Add the heavy cream taste and adjust for salt and pepper. Add the Parmesan cheese and cook until melted. Stir in the butter
