My husband has had this recipe for years and the first time he made it for me I was hooked. He is not certain where he acquired it but I always ask him to make it for me on my birthday. I love this dish and am so glad he makes this for me. I know I am spoiled when he cooks this for me.

Ingredients For cheese manicotti
- CHEESE FILLING

8 ozfresh mushrooms

1 Tbspbutter

2 cmozzarella cheese, shredded (divided)

1 ccottage cheese, small curd

1/2 cparmesan cheese, grated

2eggs

1/4 cparsley flakes1/2

1/2 tspsalt

8manicotti shells

16 ozspaghetti sauce
How To Make cheese manicotti

1On stove top cook noodles to package directions.

2Sauté mushrooms on stove top in butter. In large bowl whisk eggs and add mushrooms. To eggs mix one cup mozzarella cheese, cottage cheese, parmesan cheese, salt and parsley.

3In two quart baking dish put 1/2 cup of spaghetti sauce. Fill each of the 8 shells with cheese filling mixture placing each in baking dish careful to not stack. Pour remaining spaghetti sauce over the top of noodles. Sprinkle with remaining 1 cup of mozzarella cheese.

4Bake at 350° for 30 minutes.
