The original recipe comes from a friend on the Spend with Pennies recipe site, and not only is this very easy to prepare, the flavor is excellent! Recipe was modified slightly.

Ingredients For cheese cannelloni

12-18dry cannelloni tubes, oven ready

3 cpasta sauce, jarred or homemade, your choice

2 cmozzarella cheese, shredded
- FOR THE FILLING

2 ccottage cheese

1 pkgfrozen chopped spinach, thawed, squeezed dry, (10 oz / 285 g)

2eggs
-
1 cmozzarella cheese, shredded

1/4 cparmesan cheese, grated

1 tspitalian seasoning, rounded
How To Make cheese cannelloni

1I made a butter tomato sauce, recipe from Chef Andy Anderson, recipe is here: https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/sauce-essentials-hazan-s-butter-tomato-sauce.html And the first thing I did was to make the sauce. If you are using a jarred or canned sauce, just proceed with the next step.

2Preheat your oven to 180° C (350° F), get out a 9x13 inch baking dish.

3To a mixing bowl, add the Filling ingredients, and mix together.

4In another mixing bowl, add the pasta sauce then add ⅓ cup water and mix together. Scoop out ½ cup sauce and add to the bottom of the baking pan, spread out evenly by gently shaking the pan.

5Add the filling mixture to a piping bag or a zip lock bag with a corner cut off, fill each cannelloni tube, and place in the pan in the a single layer. For the piping bag, no tip needed, just insert the piece inside the bag and attach the outer ring.

6Pour the remaining pasta sauce over the cannelloni tubes.

7Cover the dish with foil and bake for 40 minutes.

8Remove the foil, sprinkle the dish with cheese. Bake uncovered for 15-20 minutes or until the cheese is melted and starting to brown.

9Serve and enjoy.
