Ingredients For carmelized pear, squash and parmesan noodles

3 Tbspolive oil

2 Tbspunsalted butter

2shallots, chopped

3garlic cloves, minced

1anjou pear, thinly sliced

1/2butternut squash, peeled and chopped into 1/2 inch cubes

12-15brussel sprouts
-
10-12sage leaves, roughly chopped

1/4 tspsalt (or add to taste)

1/4 tspblack pepper
-
1 pinchnutmeg
-
3 tspbalsamic vinegar (i use pomegranate vinegar)

1/2 cfreshly grated parmesan cheese

1/2 lbwhole wheat pasta
How To Make carmelized pear, squash and parmesan noodles

1Heat a large skillet over medium heat and add olive oil and butter. Add shallots, garlic, squash, brussel sprouts, sage and pear. Top with salt and pepper then stir to coat. Cook for 6-8 minutes, stirring occasionally, then cover and cook for another 5 minutes.

2While Veggies are cooking, boil water and prepare pasta according to directions.

3Turn the heat under the veggies down to low, then add balsamic and stir. Drain pasta and add directly to skillet, tossing multiple times to coat well. Add in parmesan cheese, taste and season more if desired. Cover and let sit on low heat for 5-10 minutes, stirring ocasionally, so the flavors mesh. Serve with additinal parmesan cheese for topping.
